For Owner & Executive Chef Duncan Timmons, creating fresh, interesting and honest dishes in a kitchen he could call his own had long been a dream. This dream was realised in 2008 when Duncan and his now wife Ali took the plunge to head down under from their native Scottish shores and swap city streets for a home and café set in stunningly beautiful Australian native bush, close to world class vineyards and golden sandy beaches.
In the 13 years since first setting foot in the Southwest, Duncan and Ali have seen Goanna through many changes and expansions including launching GG catering in 2012 and Goanna Goods in 2018.
In August 2020 Thales Franca joined the team as Head Chef allowing the business to put a new emphasis on the lunch offering at Goanna with his flair and passion for clean flavours and his extensive experience in high quality restaurants.
Goanna has long established itself as a destination in the casual dining scene down south for the breakfast and lunch offering which is distinguished by high quality fare at honest prices that reflect the quality of the ingredients from local producers in the region. Duncan and Thales collaborate on their shared passion for simple, fresh and understated food, which they express through their seasonal menu that is Modern Australian with influences of native ingredients, European classics, asian flavours and from Thales's home country of Brazil.
